Devils Food Forum

When we celebrated Thijs’ last day in the office, Kirsten and Barbara prepared him a surprise: Devil’s Food Forum, a moist, airy, rich chocolate layer cake. Here is the recipe:



1000 gr cream
800 gr dark chocolate
300 gr butter
800 gr raspberries


200 gr dark chocolate
8 Ts honey
400 gr butter
400 gr sugar
4 egg
320 gr flour
16 Tbls cacao

For the icing:

Boil the cream, stir in the roughly chopped dark chocolate and butter, let the mixture cool down.

For the batter:

Preheat the oven on 180 degrees. Chop the chocolate, boil 50ml water and the honey, remove from fire, stir inĀ  the chocolate until melted. Beat the butter together with the sugar until white and creamy. Separate the egg and add the egg yolk to the butter-sugar-mixture. Mix in the liquid chocolate. In a bowl mix together the flour, cacao and baking powder and sift it into the butter chocolate mix. Beat the egg white until stiff and fold it into the batter. Cover 2 baking trays with grease prove paper and spread the batter over it. Let it bake for 45 minutes.

Let it cool on a grill. Cut the shape of the building out of paper and use it as a template to cut the cake. Repeat for the second layer. For the icing whip the cooled down chocolate cream mix until light brown and fluffy. Spread some of the icing on the first layer of cake, put the raspberries on top. Add the second layer of cake and end up with another layer of chocolate cream. Cover the edges with the rest of the cream. Let it cool down in the fridge for 2 hours.
